SHORTCUTS TO GOURMET COOKING     FRANCES SCHAFFER

In the 1970s, when their son was diagnosed with hyperactivity, Fran and her husband, Dave, decided to follow a diet of all natural foods recommended in the Feingold Diet as an alternative to medication. Fran started making everything from scratch, using all-natural ingredients, and rediscovered the pleasures of fine cooking. She opened her own restaurant serving all natural foods in 1983.

In this second cookbook, Fran focuses on healthful foods without artificial additives and recipes using white whole-wheat, unbleached, and gluten-free flours. She emphasizes how cooking from scratch is easy, saves you time and money and is healthier for you and your family. Many of the recipes in this book can be used for any type of diet, and icons are used throughout to indicate a recipe or its options are gluten free, low cholesterol, all natural, or include honey. Healthful Hints provide tips on how to make a dish more healthful and Helpful Hints will help make your cooking and baking even easier.

In 2005 the Nebraska State Fair moved to Grand Island, Fran's home town, and she started entering her recipes into the fair in open class. She has won close to a hundred ribbons. This book won the Los Angeles Book Festival Award in the Cookbook Category in 2016.

"I have seen Frances doing cooking segments on a local television program. She is very knowledgeable and entertaining. Her cookbook contains recipes that are simple to make with ingredients that are readily available and within my budget. With many of her recipes, she uses step by step illustrations and also optional methods and ingredients. I would say that if you can have only one cookbook, this would be the one that I would recommend. Also if you are new to cooking and baking, I would recommend starting with this one." -- Amazon review of Schaffer's first cookbook.

PAT'S REVIEW

I found this book to be full of good old fashion recipes. The healthy part comes from the beginning of the book when the author tells you that she cooks with ingredients that are natural. For example butter, not margarine. Items that are not made with preservatives and other items that are unhealthy for you in the long run. This really is how my grandparents ate and they were farmers from Nebraska. The recipes are all simple and easy to follow along with the pictures and the stories that go along with the chapters make for a very good book. I received this book from Netgalley.com I gave it 4 stars. Follow us atwww.1rad-readerreviews.com
